Ingredients

1 pound zucchini sliced

2 tablespoons butter

1 recipe partially baked pie (or tart) shell

6 ounces mozzarella shredded

3 pieces eggs

1 cup cottage cheese (or ricotta)

1/2 cup whipping cream (or milk)

2 tablespoons oregano coarsely chopped

1/4 teaspoon salt & pepper (each)

Preparation

In small skillet, saute zucchini slices in melted butter for 8 minutes stirring frequently.

Pour zucchini into pie shell, sprinkle with salt & pepper.

Add 2 tablespoons of oregano.

Sprinkle with shredded mozzarella.

Whisk eggs in medium bowl, add cottage cheese or ricotta and cream. Pour egg mixture over zucchini.

Bake at 350 F for 45 minutes until done.
