Ingredients

1 package Uncle Bens Wild Rice

1 package mushrooms, small pkg sliced

3 stalk scallions, sliced

1 or 1 1/2 cups Peapods or snap peas, sliced diagonally

2/3 cup olive oil

1/3 cup red wine vinegar

1/2 teaspoon dry mustard

Preparation

Cook rice according to pkg directions; however, omit the butter/oil. Place in a bowl.

Make dressing and pour half of it over the rice while the rice is still warm.Cover and let sit at room temperature for several hours

Pour remaining dressing over the combined vegetables. Cover bowl and also marinate at room temperature for several hours

Combine two mixtures before serving.
