The taste of butterscotch chips is what I always imagined Butter Beer would taste like from Harry Potter’s World.  I’ve always wanted to go to the Wizarding World of Harry Potter in Orlando Florida,  just to try that drink and explore of course.   When you’re sick of making chocolate chip cookies try these butterscotch chip cookies instead. What does butterscotch taste like you ask? “Butterscotch is a type of confectionery whose primary ingredients are brown sugar and butter, but other ingredients are part of some recipes, such as corn syrup, cream, vanilla, and salt.”  From Wikipedia’s site. 

 How do you make butterscotch cookies from scratch? 

Preheat the oven to 350F. Line a baking sheet with parchment paper or a baking mat and set aside.In a large mixing bowl, cream together butter and sugars. Beat in one egg at a time. Mix in oil and almond extract.Add in the flour, baking soda, and baking powder. Then fold in the butterscotch chips. Bake for 7-10 minutes, or until the bottoms are lightly browned. The middles should still be soft. Allow to cool on pan for 2 minutes and then transfer to a cooling rack.

If you don’t feel like making the whole entire batch of these cookies, freezing the raw cookie dough is the answer. Raw cookie dough can be frozen. I like to shape it into a tubular shape and wrap it in saran wrap. Then when I’m ready to bake them, all you do is slice the cookies and place them on the baking sheet.  I’m really guilty of eating raw cookie dough so this step is a lifesaver for avoiding that. 🙂
