Weight Watchers Chicken Quesadillas - crispy tortillas filled with chicken and cheese on the inside. A delicious meal for Taco Tuesday or Mexican night! I love Mexican Food! When I was in my teens, my first job was working at Taco John’s. Taco John’s is a Mid West restaurant that serves Potato Ole’s and they are the bomb. I have made my own potato oles before using my air fryer. I get the Crispy Crown potatoes and air fry them for 12 minutes and then season them with some all-purpose seasoning.
Low Point Tortillas for Weight Watchers
This recipe for chicken quesadillas is for those that follow Weight Watchers. If you are looking for a low point tortilla option there are quite a few of them out there. My favorite is the La Banderita Carb Counter tortilla for 1 point. I like those better than the Ole Extreme Wellness brand tortillas which are 1 point as well. They can be easily found now these days especially at a store like Wal-Mart. I found the Carb Counter tortillas at Family Fare.
Cheese
There are two types of people in this World. Those that like Fat-Free cheese and those that don’t. Meh, it is alright and sometimes I use it. When it melts it kind of has the texture of Velveeta. If you don’t care for Fat-Free cheese these quesadillas can be made with full fat or reduced-fat cheese. It is up to you to decide which kind of cheese you are going to add to this recipe. We had some Mexican rice with this. The chicken marinated all day in a fajita packet that I got one time really cheap at the grocery store. Sometimes, I will make a chipotle ranch dip to go with the quesadillas but I was lazy and didn’t do that this time.
Protein
Chicken is my go-to for making quesadillas. If you are vegetarian or vegan replace it with tofu. Shrimp and ground beef are also good.
How to Make Chicken Quesadillas
Rub the chicken with the fajita seasoning. You can cut the chicken into smaller bite-size pieces right away or just cook the chicken breast whole. I find that the chicken cooks faster when it is in smaller bite-size pieces. If you don’t want to cook chicken then use some store-bought rotisserie chicken breast.
Cook chicken breasts (or pieces) in a skillet until done. Place one tortilla on a nonstick skillet and spray it with cooking spray. Layer ¼ cup of cheese and ¼ cup chicken on top and then fold over the side of the tortilla. You can use 2 tortillas but I find that these tortillas are best just folded in half.
The quesadilla will be done on one side when the tortilla is brown and the cheese is melted. Flip and wait till other side is brown.
