Ingredients

1 cup pancake Mix

1 cup white cake mix

1 egg

1 tablespoon oil

1 cup milk

1 teaspoon vanilla

2 bananas - very ripe, mashed

2 tablespoons butter

2/3 cup syrup

Preparation

Make the pancake batter: Combine first 7 ingredients (using one of the bananas) and mix well into a thick but pourable batter. Add milk if needed to get the right consistency.

Make the syrup: Combine the remaining mashed banana, butter, and syrup in a small sauce pan. Heat over low heat, stirring occasionally.

Cook the pancakes: Spoon a scant 1/4 cup of batter onto a preheated griddle to form 4 inch pancakes. Turn when bubbly. Pancakes should be golden brown in color when done.

Serve with banana syrup. Sprinkle with powdered sugar if desired.
