Watermelon poke cake was my attempt at making a cake taste like watermelon. Which is kind of hard to do with a real watermelon. Yeah, I’ve seen those fancy so called watermelon cakes where they shape the watermelons into an actual cake. Then it gets decorated with Cool Whip for the frosting. This is not the same because it’s a poke cake.  If you have never made a poke cake before it’s pretty fun!  You poke holes all over the cake and pretty much fill it with whatever you want. I chose watermelon, because I’ve been obsessed with the fruit lately. The jolly rancher watermelon flavor instant jello will give this cake it’s watermelon flavor. If you used pureed watermelon that would be too much moisture (I think anyways…)  This recipe was created back in 2014 and recently updated the post with better recipe instructions and hints to help get the perfect bacon breakfast cups. 5/19/21 

Ingredients for  Watermelon Poke Cake 

Cake Mix  -  Any flavor of cake mix will work!  Watermelon Jello  - This works great to make the cake taste like actual watermelon other than using watermelon juice.  Diet Soda   - I suggest Sprite but any flavor will work. Other flavors won’t change or enhance the color of the cake at all.  Cool Whip - or frozen whipped topping 

How to Make Watermelon Poke Cake

Mix cake mix with diet soda and applesauce, mix until well blended.Pour batter into desired pan (I use 13x9).Bake at 350 for 20-30 minutes until done.Cool cake and then poke holes in cake with knife or fork approximately one inch apart.Prepare jello as directed (typically this uses 2 cups of water, 1 boiling 1 cold).Pour jello over cake evenly.Place cake in refrigerator for 1-2 hours until cooled.Frost with cool-whip and enjoy!
