Ingredients

1 Seedless Watermelon (1)

2 cups seedless cucumber (1)

1 cup onion

1 cup red bell pepper (1)

1/4 - 1/2 cup sherry or red wine vinegar

2 - 3 dashes sirracha or other hot sauce to taste

1 teaspoon salt and pepper to taste

Preparation

Peel watermelon and cucumber and cut them up into chunks.

Puree all vegetables in a food processor in batches until smooth.

Stir in the vinegar, hot sauce and salt and pepper or to taste.

Chill soup for several hours or overnight.
