Ingredients
2 pieces Turkey wings
1 pound Baby Bella Mushrooms, sliced
1 quart turkey broth made from roasted wings
2 tablespoons Corn Starch
2 teaspoons Fresh chopped Thyme
1/2 piece Onion, half of whole onion
1 piece bay leaf
1/2 cup Roast Turkey drippings fat and juices separated
Preparation
Heat oven to 375 F, spray roasting pan big enough to hold the 2 wings with spray oil, sprinkle wings with kosher salt and black pepper, roast until nicely browned.
place wings in 3 qt sauce pan, add 1/2 onion, bay leaf and enough water to cover, bring to boil, reduce heat to simmer and cook until meat is tender and broth is flavorful
Remove wings and allow to cool, remove and discard onion and bay leaf. Set aside broth
When wings are cool shred meat and set aside.
Pour turkey fat into sauce pan and heat to med-high add mushrooms and saute until slightly browned. Add shredded wing meat and thyme. Combine broth from wings and turkey dripping to make 1 quart. Bring to a boil and then reduce heat to simmer. Simmer for 10 minutes. Stir cornstarch in measuring cup with water, still into gravy and cook until desired thickness, Season with salt and pepper to taste
Pour gravy into gravy boat and serve
