Ingredients

12 pounds organic turkey

Preparation

Oven rack on second level from bottom. Heat to 500 degrees and turn immediately down to 450 degrees.

Rinse turkey and pat it dry

Breast side up in broiler pan with legs to the back of the oven

After 20 mins, move turkey so doesn’t stick

Wait 25 minutes to check to see if breast is burning

Cover breast with aluminum foil triangle if burning

Cook for another 1 hr and 15 minutes

Take bird out of oven and let cool 30 minutes
