Ingredients

1 cup Basmati Rice

1 large can Tuna

.5 cup Milk

2 cups Frozen peas

1 can Cream of chicken soup

Preparation

Instead of using a can of cream of chicken soup, I make a substitute using 1/2 cup vegetable broth, 1/2 cup oat milk, 3 T. Butter, 1 T. Flour, salt & pepper to taste. In a saucepan, melt butter and flour together over medium heat, whisking until smooth and bubbly. Whisk in broth and milk stirring until a gentle boil, when thickened, remove from heat and add salt & pepper.

Cook the basmati rice using vegetable broth instead of water.

Stir in tuna, cream soup, milk and frozen peas

Pour into greased casserole dish

Cover with foil and bake for at least 30 min at 350 degrees or until heated through.
