Ingredients

4 cups water

2 cups sugar

1 tablespoon lime zest

3 tablespoons lime juice

4 tablespoons cinchona bark powder

2 tablespoons citric acid powder

1 cup chopped lemon grass stalk

Preparation

add water and sugar to instant pot and stir

zest and juice lime and add to instant pot and stir

add cinchona and citric acid powder to instant pot and stir

chop lemon grass, add to instant pot and stir

set instant pot to 15 minutes on high and lock lid with slow release pressure

start

after instant pot cycle is done and pressure is released, strain mixture through a coffee filter

G&T: 1 shot tonic syrup, 2 shots gin, 4-5 ice cubes, soda water to top of glass, add wedge of lime, and stir
