Well, I got to work this morning and wasn’t expecting a whole garden. A co-worker was kind enough and gave me some cherry tomatoes and cucumbers.  There was a recipe floating around on pinterest that had avocado, cucumber, and cherry tomatoes in it. What a perfect recipe to use up all the farmer’s market produce. Now is the great time to be buying produce from the farmer’s market cause everything is so fresh. 

What Ingredients do I need? 

In this section you can find substitutes or suggestions for certain ingredients. I also will try and list out what the ingredients’ purpose is for.  Cucumbers, tomatoes, onion, avocados - All the vegetables you can get for recipe try and get them at the farmer’s market this time of year. They are the freshest!  Olive Oil and Red Wine Vinegar for dressing. 

How to make Tomato, Cucumber, and Avocado Salad 

To print the full recipe please see the recipe card below.  Chop tomatoes into a medium dice. If using cherry tomatoes, cut in half. Add to a bowl. Peel and seed one cucumber and dice. Add to bowl. Remove pit, dice avocado and using a spoon scoop out the avocado from the peel. Add to bowl. Cube feta and add to bowl. Add minced red onion and minced parsley to bowl. Whisk together olive oil, red wine vinegar and black pepper - pour over salad. Toss gently so the feta and avocado don’t break up. Serve immediately. If refrigerating - keep the avocado aside and add before severing.
