Ingredients
12 ears Fresh Corn on the Cob - shucked
1/2 cup Red onion or Shallot - chopped
1-1/2 pieces Avocado - cubed
1 cup Cilantro - freshly chopped
1 cup Feta cheese - crumbled
1/2 cup Lime juice - freshly squeezed
Preparation
The corn can be simply raw; roasted slightly on the grill; or sauteed in butter. Remove kernels to a large bowl.
Add all remaining ingredients.
Season with about 1/2 teaspoon of salt and stir thoroughly.
Chill and serve cold or at room temperature.
