Ingredients

1/4 cup extra-virgin olive oil

1 1/2 tablespoons champagne vinegar

3/4 teaspoon Dijon mustard

1 teaspoon honey

Coarse salt

1 small head romaine lettuce (about 12 ounces), cut or torn into small pieces

1 small head frisee (about 6 ounces), separated into small pieces

1/2 tart green apple (such as Granny Smith), cored and thinly sliced

1/4 cup fresh flat-leaf parsley leaves

6 chives, cut into 3/4-inch pieces (about 3 tablespoons)

Preparation

Whisk together oil, vinegar, mustard, and honey in a large bowl; season with salt. Add romaine, frisee, apple, parsley, and chives, and toss to coat. Serve immediately.
