Ingredients
3 Sweet Potatoes, cut into chunks
4 cups chicken stock
3 ginger slices
2 lime leaves
1 cup coconut milk
2 tablespoon lime juice
1/2 cilantro bunch
1 salt and pepper
Preparation
heat sweet potatoes, stock, ginger and lime leaves, bring to boil, then simmer for 20 minutes.
Remove lime leave. Remove soup and blend. Return to low heat and mix in coconut milk and lime juice. Season to taste. Serve with cilantro.
