Ingredients
1 l sweet potato, diced
1 can chickpeas, drained
1 cup red onion, diced
4 ribs celery, diced
2 tablespoons sweet pickle relish
2 tablespoons sambal oelek
1 cup whole milk greek yogurt
1/2 cup yellow mustard
1 pinch salt
Preparation
Peel, cube and steam sweet potato in the microwave.
Dice red onion and rinse with chickpeas in a colander.
Combine remaining ingredients and pour over potato onion and chickpeas.
Refridgerate 2-3 hours.
