Ingredients
3 cups mashed sweet potatoes
1 cup white sugar
2 eggs
1 teaspoon Vanilla
1/2 cup milk
1 1/2 sticks butter
1/2 cup chopped pecans
1 cup brown sugar
1/3 cup Flour
Preparation
Bring a large pot of water to boil
Place 3-4 potatoes in boiling water and cook until tender all of the way through
Remove sweet potatoes and place into a large bowl of ice water
Remove sweet potato skin easily by scoring it along the long side and simply peeling the skin off with your hands (it will remove very easily)
Then place peeled Sweet potatoes in a large mixing bowl and mash & mix with 1 stick of butter (reserve 1/2 stick for the topping), sugar, eggs and vanilla.
Spread sweet potato mixture into a 9x12 casserole dish and set aside
In another mixing bowl, combine the remaining 1/2 stick of butter, pecans, flour, and pecans
Mix until it has an even crumbly texture
Preheat oven to 350 degrees
