Ingredients

9 pieces Matzah

9 Eggs, separated

1.5 cups Sugar

6 tablespoons Butter, melted

1 Zest from one lemon

1 teaspoon Cinnamon

1.5 teaspoons Vanilla

1/2 Pineapple, grated

10 Strawberries, halved

Preparation

Preheat oven to 350

Crumble matzah and soak in cold water until soft. Drain thoroughly.

Beat egg yolks with half of sugar. Add matzah, butter, lemon rind, cinnamon, and vanilla. Stir in pineapple.

Beat egg whites, add remaining sugar slowly. Beat until stiff, then fold in.

Pour into well greased springform pan (9" or 10").

Place halved strawberries against wall of springform pan, and carefully pour in the batter.

Bake at 325 covered for 2 hours, uncover to brown top.
