Ingredients

6 pieces Swai Fish Fillets

1/2 bag Fish Fry Seasoning

2 tablespoons Garlic Seasoning

6 tablespoons Salt and Pepper

1/2 cup Cooking Oil

1 stalk Asparagus

1 bag Peeled La Ratte or Yukon Gold Potatoes

1 stick Butter

1/2 cup Chives/Green onion

1 cup Heavy Cream

3 tablespoons Garlic Minced

Preparation

Wash fish fillets and dry. Once dry, season fish fillets with fish fry season and pinches of salt, pepper and garlic. Once seasoned, place in a plastic bag for 30 mins.

In a large skillet pan, add oil and warm until hot. Place fillets in pan and cook on both sides until crisp gold brown

Leave fillets to dry on paper towel for 10-15 min.

For mashed potatoes, peel and wash selected potatoes and place in a cold pot.

Begin to SIMMER potatoes in pot and add salt. Do not boil pot as potatoes will be cold on inside and mush on outside.

Once cooked, mash through a strainer until you have a fine texture.

Once mashed, place potatoes in a smoker with desired chips and flavor.

Once smoked, add to cooking pot and combine small increments of heavy cream. Add salt, pepper and cooked minced garlic.

Add slices of butter and begin to still cook on medium.

Once done cooking, add chopped chives to potatoes.

In a pan, cook asparagus with a small amount of cooking oil or butter on medium and begin to saute. Continue to turn over and add pinches of salt, pepper and garlic. Once beginning to fully cook, add a little bit of water for asparagus to absorb flavor.
