Making a pot pie is a great way to use up any leftover turkey you still have from Thanksgiving. Creamy gravy with chicken and vegetables topped with fresh biscuits is pure comfort in one pot! Turkey does taste like chicken to me but turkey can be so much more flavorful and juicier than chicken depending on what method you used to cook your turkey.  Oven-proof skillets are great for this method of cooking one-skillet meals and if you don’t have one in your kitchen you should definitely get one. Cast Iron Skillets are one example of these. Just be careful when grabbing the hot handle out of the oven. Use an oven mitt. When the time came to take this skillet out of the oven I used an oven mitt and transferred over to a place on my countertop that would be safe enough for the pan. When I was about to take the picture I completely forgot about that and accidentally touched the skillet. Ouch! It does hurt so like I said please don’t do what I did by mistake and use an oven mitt! 

Ingredients for Skillet Pot Pie 

Chicken  -  Cut into smaller sizes of bites or pieces  Butter, Flour, and Chicken stock - Helps to form the gravy. As the chicken stock simmers in the pot the gravy will get thicker. The chicken stock will also help deglaze the pan. Always use unsalted chicken stock or reduced sodium chicken stock to control the amount of salt that goes into the recipe. Salt and Pepper  - to taste  Mixed Vegetables - I just used a bag of frozen mixed vegetables but feel free to use whatever vegetable you like here such as onion or even potatoes  Parmesan Cheese - Helps to flavor the gravy  Biscuits - either homemade or store-bought from a can 

How to Make Skillet Pot Pie

Preheat oven to 450°F.Melt butter in a (10-inch) oven-safe skillet over medium-high heat. Add chicken and sprinkle with salt and pepper. Cook until chicken is browned, about 2 minutes each side.Add flour and whisk to combine. Slowly add chicken stock while whisking the skillet. Whisk until well combined. Add in vegetables and cheese. Stir to combine. Reduce heat to medium. Allow mixture to come to a boil, stirring occasionally.Place Biscuits on top of the pot pie. Place skillet on a cookie sheet and then into the oven for 10 to 12 minutes. Sprinkle with fresh parsley. Enjoy
