Ingredients

1/2 pound Mushrooms [fresh, thinly sliced]

1/2 pound Potatoes [new, thinly sliced]

6 ounces Sausage [your choice, sliced thinly]

2 tablespoons Olive Oil

1 Salt and Pepper [to taste]

10 ounces Spinach [frozen, chopped, squeezed dry]

1 cup Cheddar [sharp, grated]

1 pound Pizza Dough [room temperature]

Preparation

  1. Preheat oven to 400.

  2. On a rimmed baking sheet, toss the mushrooms, potatoes, and sausage with the oil. Season with salt and pepper.

  3. Roast, tossing once, until the potatoes are tender. 20 - 25 minutes. Let cool.

  4. Transfer to a bowl and fold in the spinach and cheddar.

  5. Divide the dough into six pieces and, on a floured surface, pull and roll into a 6 inch round.

  6. Dividing evenly, spoon the mix onto one side of the round leaving a 1/2 inch border.

  7. Wet thhe border with water and fold the dough over to form a semicircle. Press firmly to seal. Crimp if desired.

  8. Place on parchment lined baking sheet. Cut several small slits in each and bake till golden brown. About 20 - 25 minutes.
