Ingredients

3 Russet Potatoes [scrubbed clean]

2 tablespoons Olive Oil

1 Salt and Pepper [to taste]

6 slices Bacon [cooked and crumbled]

1 1/2 cups Cheddar Cheese [shredded]

3 Scallions [thinly sliced]

1 Sour Cream [for serving]

1 pinch Cayenne Pepper

Preparation

  1. Preheat oven to 400.

  2. Slice potatoes into 1/2 inch slices.

  3. In a large bowl, toss potato rounds in olive oil.

  4. Season with salt, pepper, cayenne, and garlic powder. Toss until rounds are evenly coated.

  5. Place in a single layer on baking sheets.

  6. Bake for 30 - 40 minutes, until lightly browned and tender, flipping halfway through.

  7. Top each round with cheese and bacon. Broil for 2- 3 minutes.

  8. Top with sour cream and scallions. Serve.
