Ingredients

4 Large Red Bell Peppers, or any combination of colors

1.5 teaspoons Olive Oil

1 pound 90 to 93% Lean Ground Beef

1/4 cup Shallot

1/4 - 1/2 teaspoons S & P

1 can Diced Tomatoes, Fire Roasted (15.5 oz.)

3/4 teaspoons Italian Seasoning

1-1/2 cups Mozarrella Cheese, Shredded - Divided

1/4 cup Optional - Ketchup - Added to meat cooked meat mixture.

Preparation

Preheat oven to 350 degrees F.

Cut tops off of peppers, remove ribs and trim bottoms so they stand up (be sure not to cut all the may through the pepper).

Heat olive oil in large frying pan over medium heat. Add ground beef and sausage (removed from casings and break up while sauting). Cook until meat is cooked through, about 6 mins.
