Ingredients

3 ounces Cream Cheese; softened

48 g Cane Sugar

scant 1/2 teaspoon Vanilla Extract

1 pinch Salt; preferably Fleur de Sel

1/2 cup Heavy Whipping Cream

1/4 teaspoon Unflavored Gelatin

1/2 cup Fresh Strawberries; diced

5 g Freeze-Dried Strawberries

Preparation

Cook fresh strawberries down to a compote over medium heat and dissolve gelatin while still warm. Set aside.

Grind freeze-dried strawerries to a fine powder in a food processor.

Combine cream cheese, strawberry powder, sugar, salt and vanilla in a stand mixer and whip until fully combined and creamy. Check a small bit between your fingers to insure sugar crystals have “melted” into the mixture so there is no grittiness.

Add cooled strawberry gelatin mixture and beat until incorporated.

In a separate chilled bowl, whip heavy cream to stiff peaks. Fold in to cream cheese mixture and chill.
