Ingredients
2 steak, 8 ounce griller
1 tablespoon olive oil
1 tablespoon red wine vinegar
2 teaspoons dijon mustard
1 orange
4 cups arugula
1 can hearts of palm, rinsed and sliced*
1 shallot (small) thinly sliced
Preparation
season steak with salt and pepper
grill steak on medium-high heat, 5 minutes each side, rest for 5 minutes
for dressing, whisk together vinegar, mustard and oil. season with salt and pepper
cut away peel and pith of orange. cut sections into dressing bowl. add arugula, hearts of palm, and shallot. toss to combine
serve with steak
*can substitute 1 small, thinly sliced fennel bulb for hearts of palm
