Ingredients
2 bunches greens, shredded
1/4 cup white wine vinegar
2 tablespoons sugar
1 smoked pork (hamhock or belly), diced
1 tablespoons salt
1/2 teaspoon red pepper flakes
32 ounces stock (chicken or vegetable)
1 cup onion, diced
2 cloves garlic, minced
4 tablespoons olive oil
Preparation
Saute onion, garlic in olive oil
Add smoked pork, render some of the fat
Add greens, saute until wilted and reduced
Add salt, sugar, vinegar, and pepper flakes, stir
Add stock, stir.
Cover and simmer on medium-low for two hours.
