Ingredients
4 garlic cloves, unpeeled
2 red and yellow bell peppers, cored and quartered, each
2 zucchini, sliced lengthwise 1/2" thick
1 large white onion, cut to 1/2 inch
2 corn
2 tablespoon olive oil
1 1/2 teaspoon cumin
1/2 teaspoon crushed red pepper
2 cups tomato juice or V8
3 tablespoon lemon juice
1/2 cup fresh orange juice
2 tablespoon red wine vinegar
1/2 bunch cilantro
1 english cucumber
2 pound tomatoes
Preparation
Smoke veggies and garlic 2-3 hours. Peel garlic and put in large bowl. Cut corn from cob, add to garlic. add everything to bowl. Puree. Serve with cucumber and cilantro.
