Ingredients

8 pieces Chicken Thighs

1/2 quart Jerk Seasoning (Walkerswood)

2 Tomato

1/2 quarts Mayonaise

2 tablespoons Spicy Mustard

1 head Sweet Onion

4 pieces Celery

1 teaspoon Lemon Zest

1/4 cup Lemon Juice

Preparation

Marinate chicken thighs in jerk seasoning (Walkerswood) for up to 24 hours

Smoke chicken thighs at 225F to 250F until fully cooked. Approximately 1 hour and 15 minutes

Allow chicken to cool, then cube

Chop tomatoes and celery

Combine all ingredients in a large bowl, mix, cover, and allow to chill in a refrigerator for at least 1 hour.

Serve over on bread or over lettuce. Garnish with nuts, fruit, and/or your favorite cheese. Enjoy!
