How to make Smoked Bacon Wrapped Shrimp

If you are using frozen shrimp you will have to defrost them. I like to soak them in some water and the shrimp will be ready to cook in about an hour. Take the shell off the shrimp and wrap them with the bacon. I like to use procussto because it will cook faster on the grill. Make the marinade and add the pineapple juice, soy sauce, garlic, ginger, and green onions to a bowl. Place the bacon wrapped shrimp in a zip lock bag and add the marinade to it. Preheat your smoker to 225 and then crank the heat up as high as it will go. The shrimp were ready to eat in 10 minutes. If you aren’t smoking and grilling instead use the same settings as listed above.

Allow 30 minutes to 1 hour for the coals to burn down to the correct temperature and the water to heat up. Next, drop damp wood chips or dry wood chunks directly onto the coals. Preheat your smoker or grill and set it to the highest temp possible. Place the shrimp on the grill and cook on one side for 7 minutes.
