This copy cat recipe for Barbacoa Beef is pretty damn close to Chipotle’s recipe. The sauce is a mixture of chipotle peppers in adobo sauce, garlic, spices, onion, and water. The beef gets cooked on low for 8 hrs and then it gets shredded. There will be leftovers for days and you will will never want to go to Chipotle again. Maybe? 😉 Serve it on top of some rice or inside a burrito with all your favorite burrito bowl toppings! On Friday when I got off work at noon, I was craving Chipotle’s Barbacoa Beef rice bowls. I was going to head on over there and get one, but then I thought why? I can just make them at home and have Barbacoa beef for a week! It was almost meant to be because beef roast was on sale and so was corn for their famous corn salsa that I just love. I put the beef in the slow cooker and went off to take some pics of the Blue Angels. They’re in town this weekend doing shows and a friend and I went to the park to go and take some pics of them. It was pretty awesome.
How to make Slow Cooker Barbacoa Beef
You can print off the full recipe below. Combine garlic, onion, lime juice, chipotle peppers, garlic, cumin, oregano, water, oil, and cloves in a food processor. Pulse all the ingredients together until smooth. Place the beef roast in the slow cooker and pour the sauce on top of the roast. Add the bay leaves on top. Cover and cook on low for 6 to 8 hours or until the beef is fork tender. You should be able to shred the beef with a fork. Instant Pot: Saute the beef with some oil on both sides using the Saute function that comes with the Instant Pot. Make the sauce in the food processor and pour over the beef. Set the Instant Pot to Manual and cook for 1 hr. Let the pressure slowly release.
