Ingredients
4.5 pounds Beef Tenderloin that has been trimmed and tied (must be 4.5 pounds)
2 tablespoons Unsalted Butter (important ingredient, so get the good stuff!)
1 tablespoon Salt (get the good stuff too!)
1 tablespoon Pepper
Preparation
Preheat the Oven to 500 degrees
Place beef on a baking sheet and pat it dry with a paper towel
Spread butter all over the beef with your hands
Sprinkle salt and pepper all over the beef evenly
Roast the tenderloin for EXACTLY 23 minutes for rare, 25 minutes for medium rare, and 27 minutes for medium (note that this is not all of the cooking of the meat)
Remove the beef from the oven and quickly cover tightly with aluminum foil and let stand for 20 minutes
Remove foil, cut strings, slice and serve
