Ingredients

1 can Chickpeas

3 tablespoon Tahini

1/4 cup Lemon Juice

2 tablespoon Olive Oil

1 clove Garlic

1 teaspoon Cumin

1/4 teaspoon Paprika

3 bags bare Beet Chips, Carrot Chips or Sweet Potato Chips

Preparation

In a food processor, combine the tahini and lemon juice and process for 1-2 minutes to “whip” the tahini, making it smooth and creamy.

Add olive oil, minced garlic, cumin and the salt. Process for 30 seconds, scrape down the sides, then process another 30 seconds.

Drain and rinse the chickpeas. Add half to the food processor and process for 1 minute, then add remaining chickpeas and process until thick and smooth (about 1 to 2 minutes). If needed, add a bit more olive oil or a bit of water and process to thin out to desired consistency.

Transfer to a bowl. Drizzle with olive oil and sprinkle with paprika before serving with bare Beet Chips, Carrot Chips and Sweet Potato Chips!
