Ingredients
2 cloves vidalia onion diced
2 cups Carrot diced
3 cloves garlic crushed
3 cups Celery diced
1800 milliliters organic vegetable broth
472 milliliters clam juice
450 grams scallops small
250 grams white fish fillets
500 milliliters cream
2 tablespoons olive oil
4 cups potatoes, diced
1 teaspoon Vegeta
Preparation
Saute onion, celery, carrot, garlic, potatoes until softened, about 15 minutes
Add vegeta, clam juice and broth, simmer until vegetables are tender, about 30 minutes
Add fish and scallops (I used frozen); simmer until cooked through, about 30 minutes
Add cream and simmer until warmed through
