Ingredients

1 1/2 cups Cornmeal

1/2 cup Flour

1 teaspoon Baking Soda

1 tablespoon Sugar

1 teaspoon Salt

1 Egg

1 cup Buttermilk

6 tablespoons Butter

5 ounces Green chiles (mild)

Preparation

Heat over to 400F. Put butter in castiron in the oven to melt and brown the butter. Careful to not burn the butter.

Mix together the dry ingredients in one bowl (cornmeal, flour, baking soda, sugar, and salt).

In a second bowl, whisk the egg and add the buttermilk and chiles.

Get the butter from the castiron and transfer to another bowl to start cooling it down, so it won’t scramble the eggs. Put the castiron back in the oven.

Add the wet ingredients to the dry ingredients.

Add the cooled butter.

Pull the castiron out and pour the batter into the castiron.

Bake at 400F for 25 minutes.
