Pineapple salsa is refreshing and simple to make and goes very well on top of some marinated grilled salmon. Perfect for Summer! When your kitchen is being remodeled, Summer is the perfect time to do it cause you can use your grill to cook the protein and this grilled salmon recipe is easy to make with the help of a 15-minute marinade I bought at the grocery store. The salsa can be prepped ahead of time or I’ve even added it to some mashed avocados before. So GOOD.
Ingredients for Salmon with Pineapple Salsa
Salmon - single filets or 1 whole salmon filet can work with this recipe Lawry’s Hawaiian Marinade with Tropical Fruit Juice - I love this marinade because it only takes 15 minutes. If you can’t find this marinade use any of their other marinades such as Teriyaki with pineapple juice. Use your favorite sweetener in place of sugar. Pineapple, bell pepper, cilantro, and red onion are for the salsa. If you don’t like pineapple try mango or some other tropical fruit.
How to Make Salmon with Pineapple Salsa
Place salmon in large resealable plastic bag or glass dish. Add ½ cup of the marinade; turn to coat well. Refrigerate 15 minutes or longer for extra flavor.Meanwhile, for the Pineapple Salsa, mix 2 tablespoons of the remaining marinade, pineapple, bell pepper, cilantro and onion in small bowl until well blended. Set aside. Remove salmon from marinade. Discard any remaining marinade.Grill salmon over medium-high heat 6 to 7 minutes per side or until fish flakes easily with a fork, brushing with remaining 2 tablespoons marinade halfway through cooking. Serve salmon with pineapple salsa. Makes 2 salmon fillets. Serving size: 1 salmon fillet.
