Ingredients

4 pounds Red skinned potatoes

6 green onions (scallions)

1/3 cup Olive Oil

1/2 cup butter

1 teaspoons salt pepper

3 cloves garlic

1/2 cup Parsley

Preparation

Wash & trim/cut potatoes into 1 1/2" -2" chunks if necessary. Parboil 10-15 minutes, drain

Chop herbs, onions, garlic (food processor is fine), then add oil & butter & process until well blended
