Ingredients

4 Chicken Thighs, bone in and skin on

1 Sweet Potato, Large

1 White Onion

4 sprigs Fresh Rosemary

6 cloves Garlic

3 pinches Salt and pepper

3 tablespoons Olive Oil

2 teaspoons Spice Rub

2 tablespoon Butter

Preparation

  1. Preheat oven to 425 degrees

  2. Cube sweet potato

  3. Roughly chop onion

  4. Smash garlic cloves

  5. Remove rosemary leaves from sprigs

  6. Mix sweet potato, onion, garlic, rosemary, salt and pepper in a bowl with olive oil

  7. Once ingredients are saturated, pour on to a baking pan

  8. Mix spice rub and butter

  9. Apply mixture under chicken skin

  10. Place thighs on top of sweet potato mixture

  11. Roast in oven for 45 minutes
