Ingredients
1/2 cup wild rice
1 cup basmati rice
1 cup fava beans
1/2 cup fresh chopped dill
1/2 cup Italian parsley
1/2 cups pistachios
1/4 cup olive oil
2 teaspoons lemon zest
Preparation
Cook wild rice in boiling water with salt until grains split, 35-40 min. drain and cool
combine basmati rice and zest of 1 lime in 1.5 cups water, salt, bring to boil. Reduce heat, cover and simmer 15 minutes, remove from heat, fluff with fork, let sit until water is absorbed., cool
Cook fresh whole fava beans in salted water for 5 minutes, drain, transfer to icewater, drain and peel.
