Ingredients
1 pound blue potatoes
2 tablespoons lemon juice
2 tablespoons olive oil
2 tablespoons minced chives
1 clove garlic, minced
1/4 teaspoon sea salt
1 package Tofurky Jumbo Hot Dogs
1 package vegan hot dog buns
4 stalks red radishes, thinly sliced
Preparation
In a medium saucepan, cover potatoes with water. Bring to a boil, then reduce heat to simmer until potatoes are tender, about 12-15 minutes. Drain, let cool, then slice in half or quarters.
In a medium bowl, toss potatoes, lemon juice, oil, chives, garlic, and salt.
Grill hot dogs over a hot grill fire or on a grill pan until browned. Serve in buns topped with potato salad and radishes.
