Ingredients

1 1/2 cups cheese - grated cheddar or swiss

4 tablespoons flour

1/2 cup ham - diced

3 eggs

1 cup milk or half and half

1/4 teaspoon salt

1/4 teaspoon dry mustard

1 pie shell - 9 inch

Preparation

Preheat oven to 375 F

Toss grated cheese with flour

Combine eggs, milk/cream, salt and mustard and blend well.

Layer cheese mixture, then ham alternately in pie shell.

Pour egg mixture over the cheese and ham.

If your pie shell is larger than 9 inches, you can add additional eggs and milk-just prepare more in the same proportions as needed.

Bake at 375 F for 45 minutes.

You may substitute carmelized onions and mushrooms for ham.
