Simple pumpkin muffins made with a box of cake mix, streusel topping, and a maple glaze are perfect for when the Fall weather hits or whenever a pumpkin craving strikes! Sometimes that happens in late Summer for me. 🙂 I attempted to make some pumpkin doughnuts with a box of cake mix, a can of pumpkin puree, and some water. This same recipe also works really well with muffins. Since the streusel topping was already made from yesterday’s recipe, this was super fast! What Ingredients do I need?Â
Cake Mix - Yellow or Pumpin is best. If using a sugar free cake mix it doesn’t lower the points much at all. Sugar - Feel free to use sugar substitutes instead of sugar but I haven’t tested this recipe with any. Look up the conversations online for your favorite one.Â

Preheat oven to 350.In a bowl, combine cake mix, pumpkin puree, and water. Scoop the batter into muffin tins with paper liners.In a smaller bowl combine the sugar, flour, oats, and light butter. Mix with your hands or gently with a forkTop the muffins with 1 or 2 tablespoons of streusel topping. Bake in 350 degree oven for 20-25 minutes or until a tooth pick comes out clean.While the muffins are cooling make the maple glaze. Combine the powdered sugar in a bowl with the maple syrup until smooth. Drizzle over cooled muffins.Â
