Ingredients

4 Eggs

3 cups Sugar

1 cup Vegetable oil

2/3 cup Cold water

2 cups Canned pumpkin

3 1/2 cups Flour

2 teaspoons Baking soda

1 1/2 teaspoons Salt

1 teaspoon Cinnamon

1 teaspoon Nutmeg

Preparation

Preheat oven to 350 degrees and grease 2 large or 12 small loaf pans

Beat eggs until light

Add sugar, oil, water, and pumpkin to eggs and mix well

Sift together flour, baking soda, salt, cinnamon, and nutmeg

Add dry ingredients to wet in 3 parts, mixing well after each addition

Bake for 1 hour (large loaves) or 25 minutes (smaller loaves) until knife inserted comes out clean and loaves are browned and cracked on top

Allow loaves to cool in pans for 10 minutes, then turn out onto cooling rack
