Ingredients

3 - 4 pieces Boneless and Skinless Chicken Breasts

1 Onion diced

3 tablespoons Taco Seasoning

1 Lime - fresh squeezed

4 cups Chicken stock or broth

10 Tortillas

Preparation

Place the chicken breasts in a pot and pour the chicken stock over the breasts to cover. Bring to a gentle boil over medium heat, and cook 8-12 minutes or until the chicken internal temperature is 165 degrees. In a large saute pan, heat 2 tablespoons of olive oil and saute the onions until just translucent. Add the chicken to the pan and mix well with the onions.

  1. Remove the chicken from the stock onto a cutting board and use two forks to shred the chicken.

  2. Add the lime juice and sprinkle the taco seasoning to taste (about 3-4 tablespoons or more).

  3. Add 1/4 cup of water. and combine until the chicken is well-seasoned.

Last, serve with the warmed tortillas, salsa and any desired ingredients for the tacos.
