Ingredients
3 - 4 pieces Boneless and Skinless Chicken Breasts
1 Onion diced
3 tablespoons Taco Seasoning
1 Lime - fresh squeezed
4 cups Chicken stock or broth
10 Tortillas
Preparation
Place the chicken breasts in a pot and pour the chicken stock over the breasts to cover. Bring to a gentle boil over medium heat, and cook 8-12 minutes or until the chicken internal temperature is 165 degrees. In a large saute pan, heat 2 tablespoons of olive oil and saute the onions until just translucent. Add the chicken to the pan and mix well with the onions.
Remove the chicken from the stock onto a cutting board and use two forks to shred the chicken.
Add the lime juice and sprinkle the taco seasoning to taste (about 3-4 tablespoons or more).
Add 1/4 cup of water. and combine until the chicken is well-seasoned.
Last, serve with the warmed tortillas, salsa and any desired ingredients for the tacos.
