Ingredients

1 cup shortening

1 1/2 cups sugar

3 eggs

3 cups unsifted flour

1 teaspoon baking soda

1/2 teaspoon salt

1 package (9-oz) condensed mincement, crumbled

Preparation

Preheat oven to 375°.

In large mixer bowl, beat shortening and sugar until fluffy. Add eggs; beat well.

Stir together dry ingredients; gradually add to shortening mixture. Mix well. Stir in condensed mincement.

Drop by rounded tablespoonfuls, 2 inches apart, onto greased baking sheets. Bake 8 to 10 minutes or until lightly browned. Cool. (Decorate cookies with white icing or gels if desired.)

Tip: For a more cake-like cookie, substitute 1 1/2 cups (half 27-ounce jar) ready-to-use mincement (regular or brandy & rum) for condenced mincement.
