Ingredients
1 1/2 cups Flour
1 1/2 C Luke warm cups milk or almond vanilla milk
3/4 teaspoon salt
4 pieces eggs room temp
3 tablespoons butter melted and cooled slightly
1 tablespoon bacon fat/butter/or pam spray
Preparation
combine milk, eggs and salt with immersion blender
add flour and blend til frothy, then add butter then blend til frothy, let batter rest for 15
heat oven to 450 and place greased muffin tin on a cookie sheet on bottom rack of oven for 2 min
pour rested batter into cups up to bottom part of rim
bake for 18-20 min at 450. then reduce heat to 350 and bake for another 10 min., til Golden brown on top
If tops get to dark - quickly put a cookie sheet on the top rack to prevent burning of tops
remove and poke a hole in the top of each with a sharp knife and pop out of muffin tin
