Ingredients

2 cups flour

1 cup sugar

1/2 cup oats

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

3 eggs

3 tablespoons vegetable oil

2 tablespoons orange and lemon zest

1.5 teaspoons vanilla extract

1/2 teaspoon almond extract

2 cups dried cherries and pistachios

Preparation

Preheat oven to 350o. combine first 6 ingredients in miixer for 30 seconds.

In separate bowl, whisk eggs and next 5 ingredients, then add egg mixture to flour mixture

transfer to lightly floured surface and divide in half using floured hands. Shape each half into a 16" long log.

Transfer logs to baking sheet, flatten into 2" wide strip. Bake, rotating sheet halfway through until browned and set, about 30 minutes.
