Ingredients

12 chicken pieces (pat dry) cubed breasts

2 tablespoons oil

3 garlic cloves, minced

3 green onions, chopped small

1 1/2 tablespoon brown sugar

1 teaspoon salt

1 teaspoon coriander

1/2 teaspoon thyme

1/2 teaspoon allspice

1/2 teaspoon onion powder

1/2 teaspoon cinnamon

1/2 teaspoon cayenne pepper

1/4 cup butter

1 tablespoon Dark brown sugar

1/4 cup dark rum

1/4 cup pineapple juice

Preparation

In a glass dish combine all rub ingredients, sugar, salt, pepper ,coriander, thyme, allspice, onion, cinnamon.

Add chicken to the glass dish with ingredients and rub ingredients all over the chicken with oil.

Then rub the seasoning all over the chicken. Cover and refrigerate for 3 hours. Meanwhile prepare the glaze.

Combine butter, sugar, rum, and pineapple juice in a saucepan, bring to a broil. Simmer for 8-10 minutes and set aside.
