Ingredients

1 Onion [sliced in 1/2" thick rings}

1/2 Pineapple [sliced in 1/2" rings]

2 tablespoons Oilve Oil

1/4 cup Jalapenos [pickled, chopped]

Preparation

  1. HEat a cast iron skillet on medium high heat.

  2. Toss onion and pineapple with oil to coat in a medium bowl. Season with salt and pepper.

  3. Cook onion and pineapple, turning once or twice, until charred. 8 - 10 minutes.

4, Let cool, then coarsely chop and toss in a bowl with jalapenos. Season with salt.
