Let me start by saying, I’m not a huge fan of fish. Fish was never my favorite thing to eat…I would avoid it at all costs when I was younger. Now that I get to pair the fish with a delicious pesto sauce, I don’t mind eating cod fish. Not only do I get yummy flavor, but I also get all of those healthy nutrients. The pesto sauce in this recipe is AMAZING and adds so much flavor. I was introduced to pesto when I was a kid. My dad would make pesto all the time. Over time, I became a huge fan of pesto and use it in so many recipes! We’re talking pesto chicken, pesto fish, pizza dipped in pesto sauce….oh wait, that might sound a little weird, but I LOVE it. I just LOVE this pesto sauce. Now, some people will tell you they don’t like garlic, but I’m here to tell you this sauce might just change your mind. Let’s get into the delicious pesto cod fish recipe!

Ingredients

For the fish:

Frozen Cod Fish (4-6 pieces) ¼ cup olive oil

For the pesto sauce:

1 cup sliced almonds 2 tablespoon + 1 teaspoon basil 1 tisp black pepper 3 large cloves of garlic 4 tablespoon fresh shredded parmesan cheese 1 cup extra virgin olive oil 1 teaspoon salt

Step by Step How to Make this Pesto Cod Fish Recipe

Step 1 Preheat the oven to 400 degrees. Place the frozen cod fish pieces onto a baking dish. I like to use a pyrex glass baking dish.

Step 2 Drizzle the fish with olive oil, making sure the bottom of the pan is also drenched in olive oil to prevent the fish from sticking onto the pan.

Step 3 Cover the baking dish with aluminum foil and stick in the oven. Bake for 30 minutes.

Step 4 While the cod fish is baking in the oven, add the almonds, basil, black pepper, garlic, parmesan cheese, olive oil and salt into a blender. These are all of the ingredients used to make the pesto sauce.

Step 5 Blend all of the pesto sauce ingredients until well-blended for about 3-5 minutes. The pesto is now ready.

Step 6 After 30 minutes, remove the aluminum foil and stick the fish back into the oven for an additional 50 minutes. When done baking, serve the cod on a plate.

Step 7 Drizzle the cod fish with pesto sauce and serve immediately.

Tips for Making this Pesto Cod Fish

If you don’t have almonds for the pesto sauce, you can always substitute the almonds with walnuts. If you’d like your cod fish to come out more toasted, leave the fish in the oven for longer until desired and then drizzle with pesto sauce.
