Ingredients
1 acorn squash, peeled and diced (bitesized)
4 cups brussel sprouts, cut in half
1 cup pecans, chopped
1 cup dates, chopped
2 sprig rosemary, chopped
3/4 teaspoon sea salt
1 teaspoon black pepper
2 tablespoon dijon mustard
1/4 cup coconut oil, melted
1/4 cup apple cider vinegar
3 cloves garlic, minced
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
Preparation
Combine last 10 ingredients in food processor or blender until creamy.
pour over first four ingredients and toss well
Bake 375 degrees on large baking sheet - 45 minutes.
